We have opened a new winery where tradition and modern craftsmanship come together.

Red and white wines created with the ancient Qvevri technique.

The winery at our hotel invites guests to experience the authentic atmosphere of Georgian winemaking and discover wines created with care and respect for tradition. Here, the **VOX wine** is born — a reflection of Borjomi’s spirit, climate, and soul.

We produce both red and white wines using the **ancient Georgian Qvevri method**. Fermentation and aging take place in clay vessels buried underground, which helps preserve the natural freshness, aroma, and depth of flavor.

When creating our wines, we carefully select locally grown grapes perfectly adapted to our altitude and climate. Each harvest is hand-picked to ensure the highest quality and character of the final product.

Every bottle reflects our philosophy — harmony with nature, respect for heritage, and a desire to express the authentic taste of Georgia through craftsmanship and care.

The Winemaking Process

  1. Hand harvesting
  2. Fermentation in Qvevri
  3. Natural yeast fermentation
  4. Aging and bottling

All grapes are harvested by hand to preserve their natural integrity and aroma. The wine then ferments in traditional **Qvevri** — large clay vessels buried underground that allow the wine to breathe and mature naturally.

Quick Facts

  • Altitude: 800–950 m above sea level — the temperature difference between day and night preserves acidity and freshness.
  • Soil: limestone and clay with excellent drainage, contributing to mineral structure.
  • Method: fermentation and aging in Qvevri without artificial yeasts or additives.

The **Qvevri method** is the heart of Georgian winemaking. Wine matures in clay vessels buried in the ground, where a constant temperature creates perfect natural conditions for fermentation. This process preserves authentic flavors and adds remarkable depth and complexity.

Our wines embody the harmony between nature and craftsmanship. The white wines are fresh, mineral, and elegant, while the reds are rich, smooth, and expressive.

Guests are welcome to visit our winery, explore the production process, and taste the wine straight from the Qvevri. It’s an unforgettable experience that captures the true essence of Georgia.
